Ajoutez le riz en remuant jusqu’à ce qu’il devienne translucide. Déglacez alors avec le vin blanc puis ajoutez progressivement le bouillon de légumes louche par louche en remuant sans cesse jusqu’à absorption complète du bouillon entre chaque ajout.</span></div></li><li id="wprm-recipe-10328-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px";><span style="display: block;">Au dernier ajout de bouillon, incorporez délicatement les pois gourmands. Terminez la cuisson et ajoutez 40 g de parmesan à feu éteint. Rectifiez l’assaisonnement en sel si nécessaire.</span></div></li><li id="wprm-recipe-10328-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px";><span style="display: block;">Pendant la cuisson du risotto, faites chauffer à feu doux le lait, la crème fraîche et le fumet de poisson. Dès les premiers frémissements incorporez 80 g de parmesan finement râpé en laissant frémir 1 mn puis ajoutez les écrevisses, donnez quelques tours de moulin à poivre et maintenez au chaud à feu très doux en attendant la fin de la cuisson du risotto.</span></div></li><li id="wprm-recipe-10328-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px";><span style="display: block;">Dressez le risotto sur un plat de service chaud en ajoutant les écrevisses en sauce au centre.</span></div></li></ul></div></div>
